How to Manage Your Monkey: Guest Post: 4th of July Recipes

The Fourth of July does not have to only consist of traditional grilled meals.  Below are four healthy patriotic recipes and three are even red white and blue.  They can be made ahead of time too!

Red, White and Blue Warm Cobbler

Ingredients:

For the topping:

1 cup gluten free all-purpose flour
1/2 cup raw honey or pure maple syrup
¼ c coconut raw sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pinch salt
1/2 cup butter, cut into pieces or 1/2 c coconut oil
1 cup chopped pecans

For the cobbler:

1/3 cup honey
1 tablespoon cornstarch
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
4 apples or peaches - peeled, cored and chopped (fuji, galla, or granny smith or seasonal peach)
2 cups of frozen mixed berries (cherries, raspberries, strawberries, blackberries, or blueberries)
2 tablespoons lemon juice
Garnish with vanilla coconut ice cream or Greek yogurt

Instructions:

1. For the topping - Mix flour, honey, coconut sugar, 1/2 teaspoon cinnamon, nutmeg, and salt together in a bowl. Combine butter with the flour mixture using fingers or a fork until coarse crumbs form. Stir in pecans and set aside.

2. Whisk together 1/3 cup honey, cornstarch, ginger, and 1/2 teaspoon cinnamon. Place the apples in a slow cooker, stir in the cornstarch mixture; toss with lemon juice. Sprinkle the pecan crumb topping on top. Cover and cook on High for 2 hours or Low for 4 hours, until apples are tender. Partially uncover the slow cooker to allow the topping to harden, about 1 hour. Serve with the coconut ice cream or vanilla Greek yogurt.


Berry, feta, spinach chicken salad

If you are trying to stick to a patriotic theme 4th of July party you can look no more for a salad. This salad is red, white and blue with lots of healthy greens too!

Number of servings -8-12
Serving size 1-2 c

Ingredients:

1 lb. Boneless skinless chicken breast cooked and sliced thin
1 bag or tub of baby spinach leaves or spring mix if you prefer
Fresh strawberries and blue berries
Feta cheese
Homemade vinaigrette dressing -
½ c olive oil
¼ c balsamic vinegar
2 Tbs. honey
salt and pepper to taste

Directions:

Toss all ingredients together in bowl and serve. Dressing can be served on side or tossed into salad.


Simple Fruit and Cheese Platter

Simple get an assortment of blue, black, and red berries and some cubed white cheese and lay out in flag formation.

Crab Cakes

Ingredients:

10oz crab
3 tbsp. Olive oil mayo
1 tbsp. Finely chopped fresh parsley
2 tbsp. Green onions
1-2 tsp. Siracha
1/4-1/2 c Panko
1 egg

Directions:

Combine all ingredients and pan sear in coconut or olive oil for gold crust on low.

Makes 3-4 cakes
